My birthday was last week and I could not think of one dessert that I wanted, and could have being sugar free and lactose intolerant. My solution was to make our own ice cream to celebrate. Not only healthier, but this would also create lots of fun memories (that was a lie, it didn’t turn out with the recipe I used and no one ate it, but I digress). The first recipe we found was just not doing it for me, and most dairy free recipes call for lots of strange ingredients you can’t pronounce. So with more research and trial and error I introduce my favorite: dairy free ice cream with a flavor of blueberry (or any other fruit) and vanilla! Also sugar free ice cream!

Ice Cream Making Equipment
To make this ice cream you do need a machine. Though you could probably do this in a bag with ice and salt, the best way to make this is with an ice cream maker. My favorite is of course the Nostalgia Makers, though you can also buy an attachment for you Kitchen Aide.
This is the only equipment you need for this recipe, though it does make a big difference to how the recipe turns out! If you try making it in bags let me know how it goes!

Dairy Free (Sugar Free) Ice Cream Recipe- Berry Flavored
Equipment
- 1 Ice Cream Maker
Ingredients
- 2 Cups Unsweetened Coconut Milk
- 1 Cup Lactose Free (Unsweetened/Unflavored) Half and Half
- 1 TBSP Vanilla
- a dash Of Salt
- 1/2 Cup Frozen Blueberries (partially thawed) You can use strawberries, raspberries, any fruit you want
- 2-4 TBSP Honey
- 1 Bag Ice
- 1/2 Cup Ice Cream Salt
Instructions
- Set up your ice cream machine. Place each part where it belongs. Do this before adding any ice to the machine, or any ingredients to the bowl.
- Next start by adding in all your ingredients into the center bowl of your ice cream machine
- Place the ice to the top of the ice cream machine in the outer bowl around the ingredient bowl. Place the salt on top of the ice.
- Turn your machine on and allow it to run for around 20-30 minutes. The pitch, volume and sound of the machine will change as the ice cream thickens. You want it to be very close to the consistency of soft serve ice cream. You can eat it immediately or place it in the freezer.
- If you freeze this ice cream, be sure to let it thaw for around ten-twenty minutes before trying to eat it. This ice cream, since not actually containing dairy will freeze differently and needs more time to come to a good consistency.
- Keep in freezer for up to a month before tossing
